Gluten Free Russian Apple Pie “Sharlotka”


If you are new to gluten free baking, this basic recipe is good place to start and tastes like a regular sponge cake. The key to a great result is to beat long enough until batter significantly increases in volume, this way soda is not needed for batter to rise.

I’m using a very simple flour mix for this pie with just 3 ingredients. I recommend you to use very fine white rice flour for the best texture. Soy flour adds protein to the mix and also gives a nice yellow color to the cake.

Gluten Free Brown Bread

OLYMPUS DIGITAL CAMERAI could not find a good store-bought gluten free bread, so I decided to make it myself. I started my experiments with Doves Farm Free From Gluten Brown Bread Flour and the recipe from their pack. Then I adjusted ingredients, added my favourite buckwheat flour and cumin. I love the result, it tastes great and can be stored countertop for 4-5 days. I toast it after a couple of days when the bread dries out a little bit.
